The Buck and Birch is a concept born some years ago to showcase the phenomenal but often overlooked larder of the Scottish wilds. Their boundary pushing dinners in and around Edinburgh have gained them a loyal following, and we're very excited to host them here at Edinburgh Food Studio.
Rupert Waites and Thomas Chisholm are foragers, farmers, fishermen, fermenters philosophers and fathers. In between family life and day jobs they appear collaboratively as Buck and Birch, a dining event designed to showcase all they have unearthed in the garden, seashore, forest and hedgerow. They are passionate about demonstrating just how unexpectedly exciting Scottish food can and should be. Bring people together round common tables for a fun and uplifting experience centred around delicious food, all home made/grown/picked - expect game, shellfish and the best of the wild.
