Bros' restaurant in Lecce, Puglia is taking Italy by storm. The restaurant is run by the emerging superstar chefs brothers, Floriano and Giovanni. Isabella Poti joins them as sous and pastry chef. We are really lucky, and very proud to have both Floriano and Isabella join us at Edinburgh Food Studio for three nights of avant guarde Italian cooking; Bros' Style.
Florriano has been working in michelin starred resrtaurants since he first left hotel school in Lecce. He has worked for extended periods with Basque chef Martin Berasategui, and travelled extensively to gain experinece in kitchens over-seas, including those of Luis Andoni Aduriz, Eneko Atxa, Alexandher Goutier, Rene Redzepi and Claude Bosi.
Talented and determinned 21 year-old Isa received a 30 under 30 award this year from Forbes, with experience across the best pastry sections in Europe, including under Berasategui, the Roca Brothers and Paco Torreblanca - perhaps Europe's most influential pastry chef of the last decades.
Bros restaurant uses the conceptual centrality of the ingredient in their culinary story telling, allowing quality to sing through Salentino technique with influences from around the world. Floriano and Isa bring an eye for quality to Edinburgh, and we greatly look forward to tasting what their Italian tastes make of the golden apples growing in these northern climes.
