We are extremely happy to host our dear friend Guillemette Barthouil, not only because we are proud to bring such an expert in gastronomy to the table, but also because we get to taste her products too. Guillemette Barthouil will bring some of the most delicious and celebrated traditional foods of France.
28 year old Guillemette is a third generation 'conserveur' in her family business - Maison Barthouil. She is ridiculously knowledgeable about food - BSc at the University of Gastronomic Sciences, MA in Geography of Food at Sorbonne and a researcher at Nordic Food Lab. As well as authoring a paper for the Oxford Symposium on Food and Cookery 2016 - Foie Gras: The Quantum Offal.
Guillemette is an artisan who preserves all kinds of French delicacy duck products and among others the luxurious and controversial foie gras. She was raised, and still lives in Peyrehorade, in rural town in South-West France. Guillemette returned to the family business after eight years of studying and working across Europe. Her mission became clearer after her academic pursuit and research work in Italy, France and Denmark. She had to bring new ideas to La Maison Barthouil to develop further connections to its place and traditions, making it last in time.
In this celebration of duck delicacies, Guillemette will bring product with her from France. The evening will begin with a tasting of different Foie gras - produced under the most rigorous high standards. During this guided tasting Guillemette will also explain much of the history and cultural importance of the product. We will continue the meal with an exploration into the joy of duck - everything but the quack.
Literally some of the best meals of my life have been at Guillemette's house (BR), so come an experience Bartouil hospitality for yourself. An appropriately decadent wine pairing will also be on offer.
Dinner is £42 for a fixed tasting menu with an optional £35 drinks pairing. Your evening meal is served at 8pm, and guests are welcome to join us from 7:30pm onwards.
