Modern Malaysia

Darren Teoh, one of the leading lights of Malaysian cuisine, joins us at Edinburgh Food Studio on 9, 10 and 11 February for the dinner series, Modern Malaysia.

After studying culinary arts, Darren began his career at Breizh and Le Bouchon in Kuala Lumpur, and excited to continue his career moved to Singapore, working at Les Amis and Au Jardin. It is in these French focussed restaurants that Darren started to consider the irony of flying European ingredients around the world, when they were surrounded by such an amzing diversity of quality that is grown at home. 

Taking a closer look at the restaurant scene in Malaysia, Darren found there were no restaurants really putting emphasis on exploring local quality ingredients. Nowhere that that was pushing the offer on keeping local tradition as a basis for innovation, finding a local story to tell through a modern style dish.

Dewakan, Darren's restaurant opened less than two years ago,  Having worked around the world, in top restaurants and cooking schools, Darren only opened his restaurant 2 years ago, but has since been recognised as one of the strongest culinary talents in Malaysia. Darren is passionate about his homeland Malaysia and the rich providence of its farms, forests, plantations, rivers and oceans that are in tune with its unique tropical environment. He enjoys tracing the source of the myriad of indigenous ingredients throughout the country, which has inspired him to reinterpret them in refreshing ways as modern Malaysian cuisine.

He is a visionary striving toward bettering his countries health, economy and sustainability through food. Darren comes to Scotland on a journey to tell us about Malaysia through the food he serves, naturally, he will be interpreting our Scottish fresh produce with his South East Asian avant guarde flair.

It is a great honour to welcome Darren Teoh to Edinburgh Food Studio for three nights of delights.  Dinner starts at 8pm, and guests are welcome from 7:30pm onwards. The set menu costs £42, and an optional drinks pairing menu will be available for £35.
