We are honoured to host Ben Spalding here at Edinburgh Food Studio on February 16, 17 and 18, 2017. Ben is 29 years old and lives in London, UK. Ben has trained at some of the world’s finest Michelin starred restaurants including 28 + Restaurang in Gothenburg, Per Se, Restaurant Gordon Ramsay, the Ledbury, Bagatelle, The Fat Duck, Le Manoir, Vue de Monde & L’enclume. Since returning to London in 2011, Ben has delivered his style of cooking to great success at restaurants including Roganic, John Salt & Aqua in the Shard winning several awards personally & professionally along the way.
Wanting to break away from the stiff fine dining attitude often associated with Michelin starred establishments Ben created and launched dining concepts simultaneously such as StrippedBack, NoRules & WorldDinners which went on to be received to huge critical acclaim & was an integral part in the London Street Food movement in 2011 installing StrippedBack at Street Feast in various locations to big success with global requests for StrippedBack in particular which saw Ben take the concept to the legendary music festival Coachella in Los Angeles & countless other countries including Hungary, Finland, Holland & Croatia. It is this StrippedBack concept that Ben will bring to us here in Edinburgh
2016 has seen Ben move further into creative & operational consultancy for Hospitality businesses worldwide with support to Restaurant openings in London, Landvetter Airport Hotel in Sweden & Consultancies to Stones Events, Harbour & Jones & Nisbetts in the UK.
Furthermore holding exciting and cutting edge public dining events such as ‘#AllGunsBlazing’ & ‘ Small Plate Sessions’ which explores and questions the ways of introducing another major passion of his - music into his cooking. 2017 sees Ben return to Europe to cook in various countries & take his cooking to Asia for the first time in India, Singapore & Dubai.
It is a great honour to welcome Ben Spalding into Edinburgh Food Studio for three nights of delights. Dinner starts at 8pm, and guests are welcome from 7:30pm onwards. The set menu of around 7 courses costs £42, and an optional drinks pairing menu will be available for £35.
