New Seasons Revelations

We are thrilled with our upcoming collaboration with Chris & Denise Walton from Peelham Farm. Peelham is a farm we admire and respect with whom we've worked since our opening. On 4th August Chris & Denise will come to Edinburgh Food Studio to talk about their produce and their farming philosophy, while the the food studio team cook a delicious dinner that focusses on products from around their farm - with particular focus on less expensive and tricky cuts from new season veal & lamb.

Peelham is a family-run 680 acre organic farm located close to the Berwickshire Coast in the Scottish Borders. The business operates a rigorous environmental policy which includes biodiversity management and ecological restoration, waste management and recycling. It generates much of its own electricity through renewable micro-generation. Native breeds are used as the core breeding stock for their resilience and meat quality.  Luing x Aberdeen Angus Cattle and the Lleyn x sheep are fully grass-reared and fattened. Rare-breed (Tamworth) pigs are free-range throughout their lives.

In Peelham's organic on-farm butchery, smoking and charcuterie facility it processes all the meat from its own livestock (grass-fed beef, ruby-veal, lamb and mutton; free range pork), sausages, burgers, bacon, salamis and hams which it supplies direct to the consumer. Peelham farm products have been awarded many accolades, including Scotland Food & Drink Excellence Award 2015 for its Salamis, Great Taste Gold for its Prosciutto Ham, Quality Food Award for its Ruby-veal. Their farm management, innovation and business ethos has also been subject of many awards including The Scottish Rural Award for Agriculture 2016; Future Farmer Awardfor Sustainable Land Management; The Clarissa Dickson-Wright Award for outstanding contribution to Food Farming and Education, UK Pig Producer 2014 for its high standard of welfare and added value.
