We are extrememly lucky to have the highly talented Leonardo Pereira join us at Edinburgh Food Studio for a three day exploration into the cutting edge cuisine of Portugal.
Having grown up in a farm on the outskirts of the medieval town of Santa Maria da Feira, Portugal, Leonardo spent his childhood days divided between helping his father with the planting and harvesting and visiting family members for prolonged amounts of time in the throbbing, multicultural Paris of the 1990’s.
Having decided to become a chef, Leonardo finished cook school in 2003 and found himself in need of bigger challenges, moving abroad was the obvious solution. After working his way around restaurants in Ireland, Sweden and Spain, he settled in Denmark for nearly 5 years under the extraordinary guidance of René Redzepi.
Since leaving Noma, Leonardo was at the helm of the kitchen of “Areias do Seixo” a beautiful and luxurious eco-hotel, where he was able to bring many of his long term dreams to fruition - cooking from the in situ permaculture farm, and further refining his own style and cuisine. This opportunity planted Leonardo firmly on the map in his homeland, where he is one of the great emerging talents of now.
Leornardo is planning an experimental menu for Edinburgh Food Studio, not necessarily linked to any country´s tradition but very much based on foodstuffs both widely used and also ostracized in Portugal. There will be blood, local fish & even some of his own garage experiments.
