Edinburgh Food Studio is very happy to announce an afternoon with wild food hero Miles Irving. Come and experience the wonder of foraging and taste delicious flavours of the wild a stones throw from Edinburgh Food Studio. After which, returning to the comfort of the studio, Miles will give a talk in which he tells shares thoughts about how the global implications of wild food, and why we should promote and protect it.
Wild food is good. Good for you, good for your community, good for your surroundings, good for global food systems. Its all about reconnecting with the extraordinary complexity of the living world, a world we have evolved in tandem with but alienated ourselves from in many ways.
Miles Irving is author of ‘The Forager Handbook’ and Director of the UK's foremost wild food company, Forager Ltd. Miles began his foraging adventures at an early age, rummaging through the undergrowth with his grandparents in Suffolk. After a brief flirtation with the big city and the foraging surprises found there, Miles found himself, once again, surrounded by woods, fields and country lanes out in Kent. In 2003 Forager Ltd. was born via a chance conversation with a local chef. Since then the business has grown and as well as supplying some of the top restaurants in London, Miles is involved in projects across the globe, promoting foraging and sustainability. Miles has an extensive knowledge of wild food as well as having worked with many of the world's top chefs.
If you'd like to find out more about Miles, please check this article in the guardian, or watch a talk he gave 4 years ago at MAD Symposium. Since this talk, Miles has been constantly developing his philosophy and working methods, and we very much look forward to him sharing this with us here.
