His food is ingredient based, JP is known for keeping complications to a minimum, and keeping process visible on the plate. We look forward to seeing how this star of the Irish culinary landscape treats our fine Scottish produce.
JP is founder and host of Food on the Edge, one of the worlds newest and simultaneously influential chef congresses. He is director, founding and current chair of the Galway Food Festival, and a network leader for Cook it Raw. JP is currently a commissioner for Euro-Toques Ireland and sits on its Food Council.
