This sound-clip is taken from a butter making workshop held at Edinburgh Food Studio with Patrik Johansen (aka The Butter Viking), famed butter producer for so many of the best restaurants. Patrik, who is one of the only true innovators in the relatively bland landscape of modern butter spent an afternoon with us at EFS teaching us about butter making, and ever since that day, we always serve our delicious homemade, cultured butter.
Making butter is a relatively simple mechanical process, but at every stage there are many small, nuanced choices to make. These choices are your opportunity to make the butter in your own 'style'.
